Sweet Potato Pancakes

  • 2 eggs

  • 1 Small Sweet Potato

  • 1 teaspoon Vanilla

  • 1/2 teaspoon Cinnamon

  • 1/4 cup sugar

  • Pinch Salt


  • Peal and boil sweet potato until tender.

  • Add all ingredients into a blender and blend until smooth.

  • Heat a large skillet over medium-low heat and coat with non stick spray

  • Pour batter into 4-inch diameter circles in skillet.

  • Let cook 2-3 minutes, or until brown, flip, and cook an additional 1-2 minutes

  • Top with butter, maple syrup, and fresh fruit if desired

Serve with Organic Maple Syrup!
