- 2 eggs
- 1 Small Sweet Potato
- 1 teaspoon Vanilla
- 1/2 teaspoon Cinnamon
- 1/4 cup sugar
- Pinch Salt
- Peal and boil sweet potato until tender.
- Add all ingredients into a blender and blend until smooth.
- Heat a large skillet over medium-low heat and coat with non stick spray
- Pour batter into 4-inch diameter circles in skillet.
- Let cook 2-3 minutes, or until brown, flip, and cook an additional 1-2 minutes
- Top with butter, maple syrup, and fresh fruit if desired
